It is my understanding that cat 5 is only good for 328'. How does this work at 1000'? I have purchased a GWSW1602G and it turns out that it is 372' from my NVR will this cable work to connect the two without an additional booster?

There are no way to run cat cable over 325 feet, whatever cat5e or cat6! You need to add addition Poe switch or Poe extender!
